Tex-Mex Pasta Salad

1 cup tomato juice
2 tablespoons cider vinegar
1 teaspoon dried cilantro leaves
2 teaspoons chili powder
1 teaspoon ground cumin
Pinch of cayenne pepper
1 (4 ounce) can green chiles, drained
1/2 cup chopped scallions
10 ounces linguine, cooked al dente and
    well drained in a colander
1 cup chopped fresh or canned tomatoes
1 cup chopped green bell pepper

Combine tomato juice, cider vinegar, cilantro, chili powder, cumin, cayenne, chiles, and scallions. Toss dressing with cooked linguine. Top with tomatoes and green peppers.

  • 6 cups sliced fresh strawberries
  • 2/3 cup white sugar
  • 1 cup water
  • 4 tablespoons strawberry flavored gelatin
  • 4 tablespoons cornstarch
  • 1 (9 inch) prepared graham cracker crust

DIRECTIONS

  1. Mix together the sugar, water, gelatin and cornstarch in a medium large saucepan. Boil for one minute. Remove from heat.
  2. Fold in the sliced strawberries, toss until well coated. Pour into the graham cracker crust.
  3. Chill until well set. Serve topped with whipped cream.
