Fresh Mushroom Salad (Sienisalaatti ? Finland)

1 pound mushrooms, sliced
2 tablespoons minced chives
1/4 cup whipping cream or half-and-half
2 teaspoons granulated sugar
1/2 teaspoon salt
Dash of pepper

Heat 1 inch salted water, using 1/2 teaspoon salt to 1 cup water, to boiling. Add mushrooms. Heat to boiling; reduce heat. Cover and simmer 1 minute. Drain and chill.

Add chives. Mix remaining ingredients. Pour over mushrooms and chives; toss. Serve in lettuce cups if desired.

Yields 4 servings.

INGREDIENTS

  • 6 cups sliced fresh strawberries
  • 2/3 cup white sugar
  • 1 cup water
  • 4 tablespoons strawberry flavored gelatin
  • 4 tablespoons cornstarch
  • 1 (9 inch) prepared graham cracker crust

DIRECTIONS

  1. Mix together the sugar, water, gelatin and cornstarch in a medium large saucepan. Boil for one minute. Remove from heat.
  2. Fold in the sliced strawberries, toss until well coated. Pour into the graham cracker crust.
  3. Chill until well set. Serve topped with whipped cream.
