Tu b'Shvat Fruitcake

1/2 cup brown sugar
3/4 cup sifted flour
1/2 teaspoon baking powder
2 eggs
1 cup dried fruit
1 cup mixed nuts: almonds, macadamias, walnuts, pecans, etc.

Preheat oven to 350 degrees F. Grease a loaf pan.

Mix all ingredients together. Put into prepared loaf pan. Bake until brown. Stick a wooden pick in the center to check if the cake is done. If it comes out clean, you can let it cool, then enjoy!

Strawberry Glazed Pie

INGREDIENTS

  • 6 cups sliced fresh strawberries
  • 2/3 cup white sugar
  • 1 cup water
  • 4 tablespoons strawberry flavored gelatin
  • 4 tablespoons cornstarch
  • 1 (9 inch) prepared graham cracker crust

DIRECTIONS

  1. Mix together the sugar, water, gelatin and cornstarch in a medium large saucepan. Boil for one minute. Remove from heat.
  2. Fold in the sliced strawberries, toss until well coated. Pour into the graham cracker crust.
  3. Chill until well set. Serve topped with whipped cream.
