Papaya lassi PDF Print E-mail

Papaya Lassi (Papita Lassi)

1 cup ripe papaya, diced and mashed well
1 cup plain yogurt
2 cups chilled water
2 tablespoons lime juice
1 teaspoon salt
Dash of pepper
Few sprigs peppermint
Ice cubes

Beat or blend yogurt, then add water and beat or blend again. Add mashed papaya with all the seasonings. Beat or blend again. Pour into individual glasses. Garnish with mint and serve cold.

Sweet Papaya Lassi
Omit salt, lime juice and pepper. Add 2 tablespoons sugar instead and flavor with rose water.

Makes 6 glasses.

  • 6 cups sliced fresh strawberries
  • 2/3 cup white sugar
  • 1 cup water
  • 4 tablespoons strawberry flavored gelatin
  • 4 tablespoons cornstarch
  • 1 (9 inch) prepared graham cracker crust

DIRECTIONS

  1. Mix together the sugar, water, gelatin and cornstarch in a medium large saucepan. Boil for one minute. Remove from heat.
  2. Fold in the sliced strawberries, toss until well coated. Pour into the graham cracker crust.
  3. Chill until well set. Serve topped with whipped cream.
