Spinach with Rice (Spanakouzo)

1 (10 ounce) package chopped spinach, thawed
1 medium onion, chopped
1/4 cup olive oil
1 (8 ounce) can tomato sauce
2 tablespoons lemon juice
Salt and pepper, to taste
1 1/2 cups water
1/2 cup long grain rice

Saut? onion in olive oil in saucepan until tender. Add tomato sauce, lemon juice and water. Bring to boil. Add spinach, rice and season with salt and pepper. Cover and simmer 20 minutes or until rice is absorbed.

Makes 4 servings.

This recipe can easily be doubled.

INGREDIENTS

  • 6 cups sliced fresh strawberries
  • 2/3 cup white sugar
  • 1 cup water
  • 4 tablespoons strawberry flavored gelatin
  • 4 tablespoons cornstarch
  • 1 (9 inch) prepared graham cracker crust

DIRECTIONS

  1. Mix together the sugar, water, gelatin and cornstarch in a medium large saucepan. Boil for one minute. Remove from heat.
  2. Fold in the sliced strawberries, toss until well coated. Pour into the graham cracker crust.
  3. Chill until well set. Serve topped with whipped cream.
