Wiener Erdbeeren Eis (Strawberry Ice Viennese)

1 1/2 cups granulated sugar
3 1/2 cups cold water
1/2 cup apricot brandy
Salt
2 cups strained strawberry juice
2 tablespoons strained lemon juice
1/2 teaspoon grated orange rind

Make a syrup with sugar, cold water and apricot brandy and boil for 5 to 6 minutes. Cool slightly and add a generous pinch of salt, strawberry juice, lemon juice and grated orange rind. Chill and then freeze.

  • 6 cups sliced fresh strawberries
  • 2/3 cup white sugar
  • 1 cup water
  • 4 tablespoons strawberry flavored gelatin
  • 4 tablespoons cornstarch
  • 1 (9 inch) prepared graham cracker crust

DIRECTIONS

  1. Mix together the sugar, water, gelatin and cornstarch in a medium large saucepan. Boil for one minute. Remove from heat.
  2. Fold in the sliced strawberries, toss until well coated. Pour into the graham cracker crust.
  3. Chill until well set. Serve topped with whipped cream.
