Dutch Apple Cake2 cups granulated sugar 3 eggs 1 1/2 cups vegetable oil 1 teaspoon vanilla extract 3 cups flour 1 teaspoon baking soda 1 teaspoon cinnamon 3 cups diced apples 1 teaspoon salt Combine sugar, eggs, oil, flour, salt, soda and cinnamon. Fold in apples. Pour into a greased 13 x 9-inch pan. Prepare Topping. Topping 1/2 cup granulated sugar 1 teaspoon cinnamon 1/2 cup pecans, chopped Mix sugar and cinnamon together. Sprinkle on top of batter. Sprinkle pecans on top and bake at 325 degrees F for 40 to 50 minutes.
